Recipe: Creamy Mushroom Fettucine

This is a quick recipe that you can cook in about 15 minutes (plus about 10 minutes to prepare your ingredients). You cook the sauce in the time your fettucine takes to cook, and then combine the two in the pan.

Ingredients

  • 2 portions of fettucine
  • extra virgin olive oil
  • 2 cloves of garlic, finely sliced
  • 1/2 an onion, cubed
  • 1 cup of white wine
  • 1/2 cup of chicken stock
  • 2 tablespoons of interesting herbs (eg. basil, parsley, thyme.. whatever you like), finely chopped
  • 2 cups of sliced mushrooms
  • 2 tablespoons of Creme Fraiche

Directions

  1. Boil some salted water for your fettucine (about 3L with 2 tbsp of salt), and add the pasta when the water is ready.
  2. Heat some extra virgin olive oil in a frying pan.
  3. Add the garlic and fry until lightly browned.
  4. Add the onion and continue frying until translucent.
  5. Add the mushrooms and continue frying until they start to brown.
  6. Add the white wine and bring to a simmer. Simmer until reduced by half.
  7. Add the Creme Fraiche and stir to combine.
  8. Simmer for a minute until the sauce thickens.
  9. Your fettucine should be ready about now. Drain and add to your sauce in the pan and stir to combine.
  10. Serve with freshly grated parmesan and some cracked pepper, and a glass of white wine!

Notes

If you can't get Creme Fraiche (it can be hard to find, particularly in Australia) then Sour Cream can be substituted. Places I've seen Creme Fraiche: Some Woolworths stores, Coles Online has it but I've never seen it in a Coles, Harris Farm Markets, David Jones Food Hall (expensive!). It really is worth trying to find it, as it's a lot more tolerant of heat than Sour Cream - Sour Cream can split when you add it to a hot sauce.
